What is lyophilization?

While standard drying is carried out using high temperature, which destroys a significant part of the nutritional value, the use of freeze-drying helps to preserve most of the vitamins, minerals, enzymes and other valuable ingredients contained in the fresh product. Freeze-dried fruits also have a very similar color, shape, smell and taste to the fresh product.

Currently, freeze-drying is one of the best methods of preserving food, which does not require the addition of any artificial substances. The finished product has only 1 to 2% of water, which makes it very light and long-lasting without the need for preservatives or candling it with sugar.
